W(r)ecipes While We Wait
Waiting, waiting, waiting! That’s right! We are so very excited to be waiting for our little one. The unknown is a bit overwhelming. When will we get the call? Will we get the call next month, 6 months from now, 18 months from now? Will we be at work, home or on break? How old will our child be? We have been told by many adoptive families that the waiting and the unknown is the hardest part of the adoption process.
What should we do while we wait? Pray, pray and pray some more. Pray that God brings our child and our family together in His timing and that He shelters and cares for him while we aren’t by his side. We are continuing our education on being adoptive parents through books, support groups and seminars. In fact, we have been blessed with an opportunity to attend an all expenses paid marriage retreat in August designed specifically for adoptive parents. Grant writing will continue to assist us to fund our final payment, living expenses and travel. Lastly, we have decided to make one Latin American recipe a week. The first week we made an oven baked chorizo stuffed plantain. Week two we made one of the most popular dishes in our future child’s birth country, gallo pinto (rice and beans). Hopefully the recipe a week will keep us positive during this difficult part of our adoption journey.
